BBQ Tempeh Pita Sandwich
Ingredients
BBQ Tempeh:
2 tablespoons rice vinegar
2 teaspoons sesame oil
2 tablespoons low-sodium tamari
4 ounces tempeh, grated
1/4 cup diced onion
2 tablespoons minced garlic
1/2 cup low-sodium ketchup
1/2 cup water
2 tablespoons chopped basil
2 tablespoons chopped parsley
Pinch black pepper
1 whole-wheat pita pocket, cut in half
1/2 cup shredded lettuce
1/2 cup shredded jicama
4 slices tomato
Instructions
1. In a medium sauté pan, sauté onions, and garlic in sesame oil
for 2 minutes over medium heat. Add remaining ingredients for
BBQ tempeh and simmer for 5 minutes.
2. Place 1/2 cup tempeh in each pita half and garnish with lettuce,
jicama and a tomato slices. Serve 1 pita pocket.
