Tilapia with Tomato Orange Salsa
Ingredients
Tomato Orange Salsa:
1/2 cup diced orange segments
1 cup diced tomatoes
1/4 cup diced onions
1/4 cup diced yellow bell peppers
1 tablespoon lime juice
1/4 cup chopped fresh cilantro
1/2 teaspoon salt
1/2 teaspoon sugar
Avocado Puree:
1/2 cup mashed avocado
2 tablespoons chopped yellow bell peppers
1/4 cup chopped red onion
2 tablespoons chopped tomato
2 tablespoons lime juice
1/4 cup water
1/2 teaspoon chopped garlic
1/2 teaspoon salt
1 pound tilapia fillets, cut into 4 equal portions
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
Instructions
1. In a medium bowl combine all ingredients for tomato orange
salsa and mix well.
2. In a blender container combine all ingredients for the avocado
puree and puree.
3. Season fish with salt and pepper. Sauté in a large sauté pan
in olive oil about 3 to 5 minutes on each side or until cooked
through. Serve 1 fish fillet with 1/3 cup tomato orange salsa
and 1/4 cup avocado puree.
